I substituted a very tough cut of pork, the blade, for chicken in this classic recipe. The results were tender and flavorful.
2 pork blade steaks
Black pepper
1/4 cup soy sauce
1/4 cup apple cider vinegar
Smashed garlic cloves (I use 6 or more)
Seaon the pork with the pepper.
Place all ingredients into a shallow pan with a lid.
Cover and cook on medium for about 40 minutes, or until most of the liquid evaporates.

This sounds great HonnyBrown and easy to make. Next time I see that pork on sale I'm going to give this a try!

mtc, pork blades are very cheap because they are tough. When I baked them like a loin chop, they were tough and flavorless.
The apple cider vinegar goes well with pork; balsamic is delicious also.
