Ok, I know its weird, but the grandkids LOVE to help me make it, and its really Ok- its a novelty, and can't sit for long, or it gets real.. "small"!

3/4 C Mayo

1 C diced celery

1 can sliced water chestnuts, drained

1 1/4 c shredded sharp cheddar cheese

3/4 C cooked crumbled bacon (divided)

1/4 c shredded crrots

2 Tbl minced chives

6 cups popped corn

salt and pepper to taste if needed

Combine Mayo, celery, 1 cup cheese, 1/2 cup bacon, water chestnuts, carrots and chives- Add popcorn, stir to coat- top with remaining cheese and bacon- serve immediately!

Thanks for the quick reply, Mothertrucker. Like you, I love to try interesting new takes on salads, and this sure sounds like one. When I make it, and will soon, I will let you know how we like it. Agree that the grands will surely give it a try........ Maybe for Easter brunch. Cece
