When my Mother was alive she made a jello dessert that had crushed graham crackers, whipped jello, and I think, evaporated milk. I cannot find that recipe. Do any of you make Poor Man's Dessert? Would love to have the recipe.

I know when we lose our dear Mom's we also lose that unique special Mother Daughter bond, and therefore are also somewhat lost ourselves,with so many unanswered questions which still remain unresolved.

Is it this one?

 

Pink Pie

 

1/2 c boiling water

3 oz pkg strawberry jello

1 c (or 3/4 c is ok) white sugar

1/4 c lemon juice

12 oz can COLD evaporated milk

 

Combine boiling water, jello, sugar and lemon juice  and stir until melted.  Put it in the fridge until it cools down, but don't let it set.

Beat the cold milk with a mixer until it is the consistency of whipped cream.  It has to be cold or it won't set up.

Stir the milk into the jello mixture.  Pour into a graham cracker pie crust.  Refrigerate until it sets up.

You could add some crushed pineapple if you wish.

BTW I know your original post said graham crackers were included in your mom's Poor Man's Dessert Recipe, but many recipes listed either have, or do not have the graham crackers you mentioned also included.

 

I know you can decide if you wish to you can also incorporate the graham crackers into any of the recipes you were suggested to look at on this thread, and again good luckSmiley Happy.

gmkb, I just saw your post and thought about something my mother used to make.  I know there were lots of times she would whip cold evaporated milk because we'd have it on hand instead of whipping cream.  This didn't have the graham crackers, but they would be a good addition. I remember that I really loved this but haven't had it in years -- it dates back to the 1940's.

 

SPECIAL JELLO DESSERT

Jello and Cream Whip

 

1 box Jello

1 cup cream

 

Mix Jello and water as directed on package; let chill until hard, then beat until light and puffy. Add cream, whip together then place in ice box to chill.
