Plum Torte - adapted from NYT Marian Burros

This recipe is very easy and forgiving -

I used 4 Pluots and each was cut into 6 pieces

you can make this recipe your own - using different fruits, toppings and flavorings

I used cinnamon in the batter and added slivered almonds and raw sugar on top 

 

3/4 cup sugar

1 stick unsalted butter, softened

1 cup flour 

1 tsp baking powder

pinch of salt

2 eggs

24 halves pitted purple plums

 

sugar, lemon juice and cinnamon for topping

I wonder if fresh strawberries or blueberries would work for the recipe?

I really don't know but this recipe was first printed in the 80s and every year there after for many many years. People like it bc it is so forgiving. I had it the first time a few weeks ago. Wasn't enough to get leftovers and got the recipe. Baked 2 of them today (1 for brother's fam) Sometimes doubling doesn't work - this one does

 

I would think fresh would be fine - I'm not familiar with frozen (extra water factor)

 

just place the fruit on top - strawberries - you don't have to push it down

the batter rises and the fruit will peek through - my plums became jammy as you can see - I wanna try with apricots 

 

the batter is thick and not runny - so spread it out evenly and just drop the fruit on top and I mean drop

if you want to add slivered almonds - hard to sprinkle evenly bc of the fruit poking at odd angles - so I was told by the person who baked it initially for me -

 

halfway through when the cake rose a bit -sprinkle more almonds on top

you don't need to toast as the long baking time will toast them for you
