Please share your pumpkin bread recipešŸŽƒ

I'm invited to a gathering and haven't made pumpkin bread in years (my gf made the best).

 

Can you please share a easy and good recipe for me to use -- nothing fancy just moist and tasty.

The only pumpkin bread recipe I use is from Sally's Baking Addiction--Chocolate Chip Pumpkin Bread. You can google it.

 

If I remember correctly it has to be baked longer than the recipe states, but it is very moist and hearty and has garnered lots of compliments.

@homedecor1  I have a really good pumpkin muffin recipe, but I'm not sure it is technically a pumpkin bread. But, here it is:

 

1 box spice cake mix

1 can pumpkin (not pumpkin pie)

Optional: 1 Cup chocolate chips

 

Mix,

 

Butter 12 cup muffin  tin

Bake at 350 for 20 minutes, rotate halfway through. Check for doneness with toothpick.

Let cool for 15 minutes.

Run knife around muffins and remove to rack to completely cool.

 

I use Temp-tations muffin pans. They are great.

Can I make in mini loaf pans -- they're going to be used as a "favor"  at the gathering & I plan to wrap with festive ribbon.  I need to make 10 -- 

 

I had a great recipe of course can't find it --  didn't use cake mix but sounds delicious.

@homedecor1  I would think you could use mini loaf pans. You might have to bake at a very slightly lower temp and a bit longer. Why don't you do a trial run? It isn't too expensive, and you can give away the experimental batch.

 Costco sells big boxes of mix  Krusteaz which is pretty good . It has a separate pouch to add nuts if you like or leave them out. I add a liitle canned pumkin to the mix .

I use a Fannie Farmer recipe.

 

Makes 1 loaf 

1 1/2 cups (210 g) flour
1/2 t. salt
1 cup (200 g) sugar
1 t. baking soda
1 cup pumpkin puree
1/2 cup vegetable oil
1/4 cup water
2 eggs, beaten
1/4 t. nutmeg
1/4 t. cinnamon
1/4 t. allspice
1/2 cups chopped nuts or chocolate chips
 
(Note: I changed up the order of the ingredients, but otherwise it is the Fanny Farmer recipe.)

Preheat the oven to 350 degrees.  Sift together the flour, salt, sugar, and baking soda.  Add the spices and the nuts/chips to the dry ingredients and mix.  Mix the pumpkin, oil, beaten eggs and 1/4 cup water together until smooth.  Combine the wet ingredients into the dry ingredients and stir until just combined.  Do not over mix or the bread will be tough.  Pour into a well-greased 9x5x3-inch loaf pan.  Bake 50-60 minutes.  Mine took 65 minutes.  Until a toothpick comes out clean.  Turn out of the pan and cool on a rack.

thank you I think cuz I absolutely love their pumpkin pies but who would eat that big pumpkin pie -- MEšŸ¤¦ā€ā™€ļøšŸ¤¦ā€ā™€ļøšŸ¤¦ā€ā™€ļølol

Here's mine

 

1 cup of butter

3 c sugar 

3 eggs

3 c flour

2 t cinnamon

1 t clove

1 t nutmeg

1/2 t salt

1 t baking powder

1 t baking soda

1 can pumpkin (15 oz)

 

Cream the first 3 ingredients

Sift all the dry ingredients and then add to the wet ingredients. Then add the pumpkin. Bake at 350 for 1 hour. Makes 3 mini loaves or probably 2 regular size loaf pans. I always make the smaller and give out as gifts.  

 

You can add chocolate chips if you want. I don't. Just a preference. 

 

This recipe is comparable to a restaurant here in Utah called Kneaders. I think mine is better. Smiley Wink
