I also use the recipe from Sally's Baking Addiction. I typically add raisins and top with nuts. If I make it plain, I top with cream cheese icing. I could eat pumpkin loaf every day of the year.

Only Pumpkin Bread recipe we have made.

 

Pumpkin Bread from Betty Crocker Cookbook

 

2/3 c oil

2 2/3 c sugar

4 eggs

1 can pumpkin (1 lb)

2/3 c water

3 1/3 c all purpose flour

2 tsp soda

1 1/2 tsp salt

1/2 tsp baking powder

1 tsp cinnamon

1 tsp cloves

1 c chopped walnuts

 

Heat Oven to 350° Bake 70 mins or until toothpick comes out clean

Grease 2 -  9 x 5 x 3 loaf pans

In large bowl mix oil & sugar, stir in eggs, pumpkin & water

Blend in flour, soda, salt, baking powder, cinnamon & cloves

Stir in nuts

@homedecor1 - I made this for teachers, coaches, ballet instructors, etc. for holiday gifts every year for many years. One year a teacher my son had previously asked if I would make it for his family; another one asked if I would make an extra loaf for her to freeze. Everyone really likes this - hope you will too! Smiley Happy

 

Pumpkin-Raisin Bread

 

3-1/2 c. flour

2 tsp. baking soda

1 tsp. salt

3 c. sugar

1 tsp. nutmeg

1 tsp. allspice

2 tsp. cinnamon

4 eggs

1 c. oil

2 c. pumpkin

2/3 c. water

1 c. raisins

 

Mix all dry ingredients. Add remaining ingredients. Pour mixture into greased loaf pans. Bake 1 hour at 350 degrees. Makes 3 loaves.

@homedecor1   On 04-08-2021 in a thread entitled Does anyone have a good recipe for banana bread or pumpkin bread? started by Foolywooly11 there are two pages of recipes and ideas for these including mine taken from The Joy of Cooking, which is one of my best cooking and baking resources since the 1970s.

@homedecor1   I have to admit, I've been making it with the cake mix only (no other ingredients on the cake mix) and canned pumpkin in both spice and chocolate cake mixes, for years,  I sometimes add 1/3 cup water.  Always requested.

 

It was an old weight watcher recipe, but have made it for non-weight watchers for years.  Always a hit.   Might have to add the cream cheese icing to a future batch!  I do use mini loaf pans.  I do add nuts or choc chips.

I would also add a crumb, topping, flour, brown sugar, butter, cinnamon, chocolate chips. And a maple glaze would be beautiful. It just makes yours stand out from others a little extra detail. It’s the only way I make mine..

This is a copycat of Bob Evans pumpkin bread, which I love! 

 

Equipment

  • 1 loaf pan 9 x 5 inch

Ingredients

  • 1 ½ cups all purpose flour
  • ¼ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • ā…› teaspoon ginger
  • ā…› teaspoon ground cloves
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sugar
  • ½ cup brown sugar
  • 4 large eggs
  • 1 cup canned pumpkin not pumpkin pie mix
  • ½ cup vegetable oil or other neutral oil
  • 1 teaspoon pure vanilla extract

Instructions

  • To make this pumpkin bread, begin by preheating your oven to 350 degrees.
  • Next, in a large mixing bowl combine your dry ingredients (flour, baking soda, salt, nutmeg, cinnamon, cloves, ginger, sugar, and brown sugar). Mix well with a large spoon.
  • Mix in the wet ingredients (eggs, pumpkin, vanilla extract, and vegetable oil). Use a hand mixer to mix everything until well combined.
  • Pour batter into a well greased 9 x 5 inch loaf pan. Bake for 55 to 60 minutes or until a toothpick comes out clean from the middle.

I just saw that recipe on my Facebook feed but it was a muffin recipe.  How long do you bake it and what temperature to make bread?
