Pizza Pasta Salad
1 lb. pasta (shells, bowties, penne, or whatever you prefer)
salt and pepper to taste
1/4 c. olive oil
1/3 c. rice vinegar or red vinegar
1/2 c. chopped sun dried tomatoes or cherry/grape tomatoes
8 oz. small fresh mozzarella nuggets (You can cut up string cheese if you can't find the fresh)
4 oz. diced pepperoni (I buy the tiny pepperoni slices)
1/2 c. shredded fresh basil leaves
2 tbsp. chopped fresh oregano (You can substitute 1 tsp. dried)
1/2 chopped green pepper (Sometimes I use different colors, mixed together)
You could also add things like olives, artichoke hearts, etc. - whatever you like!
Boil water and cook pasta about 8 min. Drain and cool. Put pasta in large bowl and stir in oil and vinegar. Add chopped ingredients. Toss well and season with salt and pepper. I like to sprinkle freshly grated Parmesan on top.
