1 box yellow cake mix

Bake at 350* for 45-50 minutes.

Pistachio Ripple Cake
1 package (4-serving) Jello Instant Pistachio Pudding
1 package (2 layer) yellow cake mix
4 eggs
1 cup (1/2 pt.) sour cream
1/4 cup oil
1/2 cup raspberry or strawberry preserves
*Combine pudding mix, cake mix, eggs, sour cream and oil in large mixer bowl. Blend, then beat at medium speed of electric mixer for 4 minutes. Blend preserves into 1 cup of the batter.
Pour half of the pistachio batter into greased and floured 10-inch fluted tube pan. Spoon preserves batter into pan, away from sides of pan. Spoon on remaining pistachio batter. Zigzag a spatula through batter to marble.
Bake at 350 for 50 minutes, or until cake tester inserted in center comes out clean, and cake begins to pull away from sides of pan. Do not underbake. Cool in pan 15 minutes. Remove from pan and finish cooling on rack.

And so it was. It was a “cool and groovy” slice of 70s perfection. Yes I do say that even today. I like the way it rolls off my tongue and I really dislike everything being “awesome”. That’s too extreme for me. If we exaggerate praise for everything, when is something really special? Ok, off my soap box. Cool. Happy 40th birthday, pistachio pudding!

Does anyone remember the Amish Friendship Bread (I think that's what it was called). Someone gave you starter batter and it sat on the counter for so many days, and you would add an ingredient to it or stir it every so many days? Then after so many days (like 10 or something like that) you would split the batter so you could pass some batter on the other friends, and then you would bake the bread with what you kept (usually one batch) and when you baked it off one of the ingredients was pudding. When my dad was still able to get out and about, he went to dances at our senior center and they would take turns bringing treats. I made this a lot for him, and the favorites of the people at his table liked pistachio and cheesecake the best
Anything pistachio, I love. Will be making some of the bread posted here.

I remember those pass-around batters too!!!
It's a wonder we didn't all catch some kind of disease from all that stuff sitting around at room temperature LOL!!!!

I've made Pistachio cake for many years. The one I usually use is the ones posted above that has the cake mix and pudding mix in it. Pistachio cake was popular during the Watergate era. The cake was even called Watergate cake with cover up icing. Its a similar bundt care recipe. I think you could keep the coconut and pecans out of it if you wanted. I'd add a tiny bit of green food coloring and make sure to add almond extract.
There is even a Watergate salad that uses pistachio pudding mix too.
