Thanks for all the suggestions.  I made a Frozen Pineapple pie.  Recipe given to me by a friend.

Frozen Pineapple Pie

 

1 lemon juiced

1 14oz can sweetened condensed milk

1 20 0z can crushed pineapple with juice

16 oz cool whip

2 9" graham cracker pie crust

 

Combine condensed milk and cool whip

Mix in pineapple and lemon juice

pour in pie shells

freeze for 12 hours

Thaw 20 minutes before serving

@Mom2Dogs  Do you have a 10" pie plate?   Or a Bundt pan?  You would have to adjust the baking time, but I think either might work.  If I were you, I'd try a buttered Bundt pan, cutting the pineapple slices in half and arranging them as attractively as I could in the bottom of the pan.

To anyone who decides to make a Pineapple Casserole, it really does make a difference if you shred your own cheese.  The bagged, pre-shredded cheese (which has an ingredient to keep it from sticking together) doesn't melt as well.  It's the "Treasured Family Secret" which makes some Pineapple Casseroles THE BEST ONE.

I was coming to post this.  I had to get it out of my cookbook.

 

This is perfect for summer.  It is so light and refreshing.  It's my go-to summer item to bring to parties.

Flbettyboop......I was going to post a similar recipe for the Pineapple Pie....mine is called Carolina Pie but same except it calls for 1 (8 oz) can crushed pineapple and 1 (8 oz) Cool Whip and 1 cup of chopped walnuts.  Easy recipe.....very good....and makes two pies!  I have to laugh....recipe came from my mother and she put note...."very rich so don't make pieces too large". Ha!
