choice of fillings listed below

FILLING# 1

1/4 cup broccoli...chopped

1 cup cooked ham...chopped

1 cup Swiss cheese...grated

FILLING# 2

1 (10 ounce) package frozen spinach...thawed and squeezed dry

1 cup cooked and crumbled Italian sausage

1 cup mixed Mozzarella and Cheddar cheeses

FILLING# 3

1 1/2 cup zucchini...thinly sliced and sauteed

1 cup onion..sliced and sauted

1/2 cup diced tomatoes

1 cup Monterrey Jack cheese...grated

FILLING# 4

1 (6 ounce) can crab meat...drained and flaked

2 cups mushrooms...sliced and sauteed

1 cup Swiss cheese...grated

For the CRUST, mix the cream cheese, butter, flour, and salt in a food processor or mixer til the dough just forms a small ball. Press into a 10 inch pie plate. Pinch edges (flute). Chill while making the QUICHE MIXTURE.

For the QUICHE MIXTURE, Beat together the eggs, half and half, salt, pepper and nutmeg. Set aside.

Saute the onions in butter for 3 minutes. Preheat oven to 375*. Choose the filling you will be using and saute any of the vegetables that require it til just tender. Add the other ingredients. Spread mixture evenly over the UNBAKED crust. Pour the egg mixture on top. Bake 40-50 minutes or til set. Let stand 5 minutes before cutting.

~~~NOTE~~~ Alot of times I choose # 2 filling..but, INSTEAD i will use 1 1/2 chopped chopped tomatoes (in place of spinach) 1 cup cooked crisp bacon, cut in small pieces (instead of sausage)
