I am sure your pie will be tasty no matter which corn syrup you use. A pecan pie is always good.


@drizzellla  I was so touched to read your story about your Dad's talent for making pecan pies and how his first physical therapy rehab project after his stroke was to learn how to make a pecan pie again.  Thank you for sharing your story! That's really truly amazing that he made a pecan pie crust with just his left hand. I also like to use dark corn syrup in pecan pies- it creates more depth of flavor to the pie and is really delicious. I make pecan pie bars in an 8" x 8" pan all from scratch, filling and crust for Thanksgiving. Pecan pie is one of my top 3 favorite desserts 😊💖.

My "award-winning" Pecan Pie contains a whole stick of (melted) Butter and dark Karo syrup, which gives it a richer, depth of flavor.

 

Using the recipe on the bottle of syrup, I also cut back on the sugar (Half a cup, instead of a cup, which makes it less sweet.)

@LavernLuvsShoes  A whole stick of butter and dark Karo corn syrup- that's my girl 😁🙌💯💖! I do the same with my pecan pies and they get rave reviews! I bet your pie is delicous 😁

I have to agree!  The butter mellows the syrup's sweetness!

 

Makes the best dark pecan pie!

@SportyShorty07 Thank you for the kind words regarding my Dad.

 

I feel so blessed that I had the Dad that I did.

 

He was a hit with all the people who worked in the rehab facility. They liked working with him because he was so determined to do everything they tried.

He had his stroke after a 300+ mile charity bike ride. He got to the end of his driveway and had the stroke in the middle of the street on his bike. Sadly, he never got the use of his right side but it never stopped him from trying.

 

And it never stopped him from making pecan pies and caramels for the holidays.

@JeanLouiseFinch This is my grandmother's recipe, so it could easily have been passed down from early in the 1900's.

I have always used light Karo syrup.

I use a recipe from an old Betty Crocker cookbook.

Don't overbeat the mixture. If it gets air in it it will not set up right. I had this happen a couple of times when I was in a hurry.

You can add 1 teaspoon or so of vanilla even though it's not in the original recipe. I like it either way.

 

Pecan Pie

 

3 eggs

2/3 c sugar

½ t salt

1/3 c butter

1 c light Karo syrup

1 c pecan halves or broken pecans

 

Heat oven to 375° Prepare Pastry

Beat eggs, sugar, salt, butter & syrup with mixer. 

Stir in nuts. Pour into pastry lined pie pan.

Bake 40-50 mins or until filling is set.

@drizzellla  You're welcome, Drizzellla 💖- your Dad must have been a wonderful, strong man and a real blessing.  Stories of stroke recovery like your Dad's really show that the mind, body and heart can overcome adversity.  Your Dad did a very honorable and incredible act by doing the 300+ mile charity bike ride and I am so sorry that his stroke happended after such a long journey of a bike ride.  The determination he had to finish that charity race, to recover from the stroke, and to regain mobility on his left side to make pecan pies and caramels-- truly inspiring and heartwarming to hear that he did all of those things.
