This was on our local TV station this morning. 

MICROWAVE PECAN PIE  BITES 
       

3 tbsp butter
3 eggs, beaten
1 C dark corn syrup
1/4 C firmly packed brown sugar
1 1/2 tsp all-purpose flour
1 tsp vanilla extract
1 1/2 c. pecan pieces

Microwave butter in a 2 cup glass measuring cup at high, 1 1/2 to 2 minutes.
Add eggs, corn syrup, and brown sugar.
Add flour and vanilla to melted butter.
Microwave at medium/high for 2 minutes.

Stir in pecans.

 
Microwave at medium 1 minute. 

Center will be soft but will firm while standing. Cool.

Pour into Tostitos Scoops for sweet/salty pie bites!

Is all of this prepared in only the 2 cup glass measuring cup?  Or is another larger one used to accomodate all additional ingredients?  I'm affraid of it boiling over in microwave when all other ingriedents are added to such a small measuring cup.  Thank you!

She showed them already prepared.  I copied the recipe off the internet, "pecan pie in a mug."  

I'm not sure if it could boil over, sorry!  Depends on how hot your microwave gets.  Better safe than sorry!!

I think these would be good with any instant or cook pie filling that would go with salt.  Sweet chocolate and salty!  Yeah!

This recipe reminds me of pralines I make in the microwave from allrecipes:

1 1/2 cups brown sugar

2/3 cup heavy cream

1/8 tsp salt

2 tbsp butter

1 1/2 cups pecan halves

1 tsp vanilla

Mix sugar, cream, salt, butter, and pecans in glass bowl.  Microwave for 4 minutes and stir.  Microwave for 5 more minutes.  Let rest 1 minute.  Add vanilla and stir for 3 minutes.  Drop by spoonfuls onto greased waxed paper.
