This might be a repeat also, sorry, but hot weather makes me think of cool stuff.....

Peanutty Crunch Pie

In a bowl mix....1/3 cup peanut butter and 1/3 cup light corn syrup until thoroughly combined. Add 2 cups Kellogg's Rice Crispies cereal; mix until well coated. Press* mixture evenly and firmly around sides and in bottom of buttered 9" pie pan. Chill until firm. Spread 1 qt. slightly softened vanilla ice cream** evenly in pie shell. Freeze til firm. Cut into wedges to serve and top with fresh fruit.

* lightly buttered wax paper makes spreading easier or wet fingers

** can use any favorite ice cream or toppings, i.e. chocolate,butterscotch, etc.
