My mother-in-law gave me this recipe 45 years ago, when the only chicken I knew how to prepare was Howard Johnson's frozen chicken croquettes! It is probably the easiest dish you'll ever make, but is so pretty and tasty no one will ever guess!

Pound boneless, skinless chicken breasts (or if thick, slice each lengthwise through the center to create two pieces) and marinate overnight, in Milani 1890 French dressing.(If this is hard to find, any regular French dressing, like Ken's Country French, is perfectly fine.) Turn once.

Let chicken get to room temperature, about 1/2 hour to one hour. Drain juice from canned cling peach halves; place fruit on top of rolled chicken. (Now, the recipe says rolled, but really each chicken breast is just folded over in half.) Add remaining marinade to pan.

Cover lightly with foil and bake @325* for 1/2 hour. Remove foil and finish baking for 1/2 hour more. Baste occasionally so fruit doesn't dry out. Serve with plain rice with some of the sauce.

This is a great dinner party dish with the addition of different fruits; canned pears, apricots, plums, etc.
