I just got this recipe using baratta in an email from Meredith Laurence, The Blue Jean Chef about 2 secs ago!

@RespectLife, I do something similar using eggplant slices instead of the chicken. I bake them because they absorb so much oil.

@RespectLife   I am glad to hear you and Mr. Respectlife liked the salad so well.  I wholeheartedly agree that the dressing from the Cucumber, Peach and Basil Salad would go well with this one.  Good thinking!    BTW, yes, you're right about comparing burrata to ricotta. 

 

I looked at the Chicken Paillard with Burrata recipe, thanks for sharing that one.  Now I have to buy more burrata -- I used the remaining half of the first ball centered in a plateful of Tuscan White Beans with Tomatoes, Mushrooms and Artichokes.   Because of its short shelf life, and before I found your link to the chicken recipe, I gave the other ball of cheese to a neighbor.  Knowing what I know now, I'll make better plans for the next purchase.

Oh thank you @IamMrsG  for the link to the Tuscan White Bean recipe!

 

I either missed it first time around or it got buried in my massive pile of 'Make This Next' recipes I have collected!

 

I love everything in there and like your idea of either using the egg and feta or the burrata!

 

I just need to get more sun-dried tomatoes.  I am pretty sure my cupboard is bare on that!
