Peach Upside-Down French Toast
1/2 cup packed brown sugar
12 slices cinnamon raisin bread
1 cup milk
1/3 cup sugar
8 ounces cream cheese
1/2 cup raisins
1 teaspoon cinnamon
4-6 fresh peaches...peeled and quartered
5 eggs
1 cup heavy whipping cream
3 teaspoons almond extract
1/4 cup sugar
1/4 teaspoon nutmeg
spray a 9x13 inch pan baking dish with nonstick spray. Sprinkle brown sugar over the bottom of the pan. Layer quartered peaches to cover the bottom of the pan. Arrange 1/2 of the bread over the peaches. Combine 4 eggs, milk, cream, 2 teaspoons almond extract and 1/3 cup sugar. Pour 1/2 of this milk mixture over the bread. Prepare the filling by combining the cream cheese, 1/4 cup sugar, 1 teaspoon almond extract and the remaining egg. Spread this filling over the bread and top with raisins. Layer remaining bread in pan. Mix together nutmeg, cinnamon and remaining milk mixture together and pour over bread. Cover and put in refrigerator overnight. Allow to stand at room temperature for 30 minutes. Bake covered for 30 minutes at 350*. Uncover, increase heat to 375* and bake for an additional 20-30 minutes til lightly golden and puffy.
