An Italian high protein, low cal frozen dessert


This recipe is adapted from Clean Eating (July 2011 issue).

Ingredients
1 cup Greek Yogurt

1 egg yolk
1/3 cup agave syrup...or I used four stevia packets
1 tsp pure vanilla extract
4 egg whites
2 medium peaches, pitted and diced (I used Trader Joe's frozen mango chunks instead)
1/3 cup almonds
Directions

Line an 8x4x5 inch loaf pan with plastic wrap.

In a large bowl, combine yogurt, egg yolk, agave syrup, and vanilla extract.

In a seperate bowl, beat egg whites into stiff peaks with an elelctric mixer on high. Using a rubber spatula, fold egg whites into yogurt mixture, a third at a time, until combined. Gently stir in peaches and almonds.

Pour mixture into prepared pan, smoothing top with spatula. Freeze for 2-3 hours, until just frozen. Peel plastic wrap from semifreddo and slice into 8 equal portions.

TIP: To ease slicing, simply run knife under warm water for 1 min.
