There are some really good pasta salad recipes on the allrecipe website but this one especially appealed to me.  It's a Southwest Pasta Salad reminiscent of Mexican food.

@Kachina624   Thank you for posting the link.  That is deefinitely a new idea for a pasta salad to me.  I will try it soon.

 

Think my Significant Other will also like it.  We are always looking for new things recipe-wise.

Thanks!  Will be a nice change from my favrorite from allrecipes.    (I double up on Genoa salami and leave out the the pepperoni.)

This is my favorite from Chelseas' Tea Room, Biltmore Village, Asheville, NC.

 

 Chelsea's Pasta Salad

 

 1 box rotini pasta

1 small packet ranch dressing mix

2 Tbsp. fresh chopped or 1 Tbsp. dill weed

Juice of 1/2 lemon

2 Tbs. buttermilk (or a little vinegar added to milk)

1/2 C mayonnaise

1/2 C sour cream

4 stalks celery finely chopped

1 small red onion, chopped

1 C thawed frozen small green peas

 

Cook pasta al dente.   Cool completely.  (I use cold water)

In bowl combine dill, ranch mix, lemon juice, buttermilk, mayonnaise, and sour cream.  Stir thoroughly, salt and pepper if desired.

 

In large bowl toss pasta, celery, onion, and peas.

Pour dressing over and refrigerate 6-8 hours.

 

(I add green pepper and a little more dill).

 

They served it with a scoop of homemade chicken salad, a small piece of quiche, and mixed fresh fruit.

Strawberry Balsamic Pasta Salad

INGREDIENTS (8 servings)
 
1 lb. penne
3 c. baby spinach
2 c. sliced strawberries
1 c. crumbled feta
1/4 c. sliced almonds, toasted
kosher salt
Freshly ground black pepper
Balsamic glaze, for drizzling
 
DIRECTIONS
 
  1. In a large pot of salted boiling water, cook penne according to package directions until al dente. Drain and transfer to a large bowl.
  2. Add spinach, strawberries, feta and almonds and toss until combined. Season with salt and pepper.
  3. Drizzle with balsamic glaze (or balsamic) and serve.

Shrimp, Lemon & Gemelli Party Pasta Salad

Ingredients (serves 6)
 
1 lb. gemelli or cavatappi pasta
1 lb. large shrimp
1 lemon
1/4 c. extra-virgin olive oil
2 tbsp. Champagne or white wine vinegar
2 tbsp. Chopped fresh dill
1 tbsp. capers
1 tbsp. Dijon mustard
1 clove garlic
1 pt. multicolored grape tomatoes
1/2 seedless English cucumber
 
Directions
 
  1. Heat large covered saucepot of salted water to boiling on high. Cook pasta 2 minutes less than label directs, stirring occasionally. Add shrimp; cook 2 to 3 minutes or until pasta is al dente. Drain well.
  2. While pasta cooks, from lemon, grate 1 teaspoon peel, and squeeze 2 tablespoons juice into large bowl. Add oil, vinegar, dill, capers, mustard, garlic, and 1/2 teaspoon each salt and pepper; whisk to combine. Stir in tomatoes and cucumber.
  3. Add hot pasta and shrimp to large bowl; toss until well-coated. Serve warm or refrigerate in airtight container up to 1 day ahead
