Pappardelle with Pesto, Ricotta and Vegetables

We tried a new recipe this evening that I want to share with you. It is fabulous, and that is a word I very rarely use. Fabulous. My DH called it, "addictive."

I would not change a thing about it. Served with a chilled white wine and a warm loaf of French bread, it was a very enjoyable dinner. DH and I agreed that, served in smaller portions, it would also make a great side dish to grilled chicken or steak.
