This is a light dessert and easy to make. Perfect for Thanksgiving.
PUMPKIN PIE CUSTARD
1/3 cup sugar; 1/2 cup baking mix (Bisquick or Pioneer); 2 Tbsp margarine; 1 (13-oz) can evaporated skim milk; 1 egg or egg substitute equivalent to one egg; 1 (16-oz) can pumpkin; 2 1/2 tsps pumpkin pie spice; 2 tsps vanilla
Heat oven to 350 degrees. Grease pie plate (9 x 1 1/4-inch or 10 x 1 1/2-inch). Beat all ingredients until smooth (1 minute in blender on high or 2 minutes with hand beater). Pour into pie plate. Bake until knife inserted in center comes out clean (50-55 minutes). Makes 8 servings. 100 calories & 2.6 grams fat per serving.
