PRESSURE COOKER PORK CARNITAS

For anyone who enjoys using a pressure cooker, especially on these hot days, here is a delicious recipe for pork carnitas.

 

PRESSURE COOKER PORK CARNITAS 

 

About 3 pounds of BONELESS pork shoulder, cubed in medium chunks

1 large onion, sliced

About 5 or 6 garlic cloves, roughly cut

1 tsp dried Chipolte powder

½ tsp cumin

1 regular size can chicken broth (14oz)

A little sprinkling of seasoned salt

1 jalapeno, seeded and minced

 

Put everything in the pressure cooker and cook on high pressure for 40 minutes.  When done, take the pork out including the onions and garlic with a slotted spoon and lightly shred some of it, leaving some in small chunks.  Spread the pork with the onions and garlic onto a lined foiled cookie sheet.  Put in a 400 degree broiler and broil about 15 min., turning often and adding some meat juice from pressure cooker to keep the meat just moist enough so it doesn't dry out..  (You don't want the meat swimming in the meat juice when you put it in the tortillas)

 

***Serve on flour tortillas with sour cream, green salsa verde, fresh avacado sliced in pieces and top with a squeeze of fresh lime wedge.  Delicious!

 

*If you want it a little hotter, you can add an additional minced, seeded jalapeno pepper to either each tortilla individually or to the cooked meat.
