POTATO SALAD with GREEN BEANS & BALSAMIC VINAIGRETTE

POTATO SALAD with GREEN BEANS & BALSAMIC VINAIGRETTE ~ novadc 

For 6 servings:
1.5 pounds small round red potatoes, peeled if desired
3/4 lb. fresh green beans, trimmed
1 small red onion, chopped
1/4 cup chopped fresh basil
Balsamic Vinaigrette

Arrange potatoes in steamer basket over boiling water; cover and steam 20 min. or until tender. Place in a large serving bowl.
Arrange beans in steamer basket over boiling water; cover and steam 10 min. or until crisp-tender.
Quarter the potatoes; add beans, onion and basil.
Add Balsamic Vinaigrette to potato mixture and gently toss.
Serve immediately or cover and chill.


BALSAMIC VINAIGRETTE
1/2 cup olive oil
1/4 cup balsamic vinegar
2 Tbsp. Dijon mustard
2 Ttsp. fresh lemon juice   (Should be Tbsp per the OP)
1 tsp. salt
1/4 tsp. pepper
Dash of Worcestershire sauce
1 minced garlic clove
Combine all ingredients in a jar, cover tightly and shake vigorously. Makes 1 cup.

One question, just to be sure -

Is the measurement for lemon juice listed below in BOLD supposed to be tablespoons or teaspoons?

Can't find my original recipe since QVC's computer guru wiped out many of them, but  I can see the BIG typo you found.  (Note to self:  PROOFREAD BEFORE POSTING!)  Apologies for the error.

 

However, I'm sure the recipe calls for TABLESPOONS of lemon juice, not teaspoons.  I wouldn't make a teaspoon typo with a capital T and four letters.  So go with TWO TABLESPOONS of lemon juice.

 

Actually, though, it probably doesn't matter when making one of the thousands of formulas for a vinaigrette---go heavy on the things you like in the dressing and lighter on  ingredients that don't appeal.

 

I believe it's key to this dish to make the dressing fairly tangy, because potatoes soak up a lot of seasoning.  Just my opinion, based on my own taste buds.  Hope you enjoy the salad.

Thank you ladies, this was just fantastic!  I love NO MAYO!  I didn't need to use all the dressing and have some left for a tossed salad as well.

 

The flavors were delicious and it was easy to make since I used red potatoes by Wegman's in a microwave steamer bag...and green beans that Weg has in a microwave steam bag!  Voila...done in a flash!

 

Thanks again, I will be making this over and over again....maybe with some bacon!  LOL
