Makes about 14 Latkes. Combine all & mix well the following ingredients: 2 C firmly packed, grated potatoes; 1 large egg; 2 T grated onion; 2 T flour; 1/2 t salt; 1/4 t pepper. Coat the bottom of a large, nonstick skillet with EVOO & heat on medium-high. For each Latke: add heaping tablespoon of potato mixture to oil; cook 3 minutes; reduce heat to medium; turn potatoes over, & continue cooking until browned & cooked through --- about 4 minutes more.
