PIMENTO CHEESE

I made this last night.  I happened to have all the ingredients except the green onions so I skipped those.

 

1-8oz cream cheese, room temp
1-4oz jar diced pimentos
2 cups extra-sharp cheddar cheese, shredded
1/2 cup green onions, sliced
1/3 cup mayonnaise
1/4 t garlic powder
1/4 t smoked paprika

A couple of squirts of Sriracha, to taste
Kosher salt and black pepper, to taste

 

Mix mayo, garlic powder and smoked paprika.  

 

Combine cream cheese, pimentos, cheddar cheese and green onions with mayonnaise mixture evenly mixed..  Add Sriracha, salt and pepper to taste.  

 

I added a little more smoked paprika.  Pimento cheese is an amazing addition to a panini or grilled ham and cheese sandwich.  You can use any hot sauce you prefer.
