Now, your recipe sounds great.  I won't touch anything with cream cheese in it.  And I do love pimento cheese.  With some tabasco, of course.

 

Wegman's makes a great PC.

@Bridgegal  Where in Wegmans can it be found? I have never seen it there.

The Wegmans in my area have had it in a couple of places.  They have a waist high chiller that has various cheese spreads in it.   It's also been on a cooler shelf down from the produce and across from the cheese area.  For a while it was IN the cheese section.   

 

Another one of their spreads that is great is their spicy vegetable cheese spread.  It in the same place.   I suggest you ask someone in the cheese dept.

By any chance is the pimento cheese at Costco the one from Palmetto ? It is a South Carolina company that has been branching out nationwide.  They haven’t made it to our Costco yet in Minnesota but they are in many Costco stores.  It is sold nationwide at Target but in a smaller container and I love it ! Very good stuff😁 

 

i always grab grab a tub when we travel to Florida and keep it st the hotel for snacking😀

I love Pimento Cheese too, but don't like the store-bought ones.  They are way too thick and I have to add a bunch of mayo to it to use it at all.  However, @SurferWife, I have deep Southern roots too, but I won't touch anything but Hellman's, but then again, my mother always bought Miracle Whip, blech, blech, blech.  That's not even mayo.  

 

Now, if I could just figure out my grandmother's Pink Pie.

@Icegoddess  This is a former co-worker's recipe for Pink Pie.  She used to bring it to Christmas gatherings:

 

1/2 cup boiling water

3-oz package strawberry gelatin mix

1 cup sugar

1/4 cup lemon juice

12-oz can cold evaporated milk

graham cracker crust

 

Stir water, gelatin mix, sugar, and lemon juice in bowl until dissolved.

In separate big bowl beat milk with electric mixer until whipped into peaks.  Fold gelatin mixture into bowl of whipped milk.  Pour into crust and refrigerate for 4 hours before serving.

@deepwaterdotter that sounds very similar.  I know she did a vanilla wafer crust, but I would prefer graham cracker anyways.  I actually have her recipe, but there are no specific amounts.  Like, it calls for 1 pkg frozen strawberries, but I remember frozen strawberries back then coming in a metal-like container rather than the plastic bags we get now.  However, I did find strawberries in a plastic container, so maybe that would be closer to the amount. Then it says 1 pkg Jello and 1 small can Pet Milk.  So, I'm guessing that was 3 oz Jello and 5 oz Pet Milk.  I don't remember seeing those really small cans of Pet milk I see now growing up but I could be wrong.  Her recipe only calls for 1/2 cup of sugar though.  I hate to waste food, so I have been afraid to experiment.  Also, it doesn't say anything about boiling anything.  Water isn't even mentioned in the recipe.  Maybe when she (or whoever) wrote it down she figured nobody would be dumb enough not to use the directions on the back of the Jello container.  Well, that would be me.
