I want something sweet today and there is not one thing in the house.  Downside of staying quarantined.  Found this recipe.

 

1-1/4 sticks unsalted butter (10 T)
1/2 cup powdered sugar
2 t vanilla extract
3/4 t kosher salt
1-1/2 cups AP flour
3/4 cup chopped pecan, toasted

 

1 egg yolk
1/4 cup demerara sugar

 

 

Cream butter, sugar, vanilla and salt until smooth.  Scrape bowl.  Add flour and mix on low just until fully combined.  Add pecans mixed until evenly combined.  

 

Turn the dough onto lightly floured parchment paper.  Shape into a squared log  (1-1/2 to 2 inches wide and high).  Wrap dough in plastic wrap and chill overnight or until dough has gotten very firm.  

 

Pre heat oven 350 - line two baking sheets with parchment paper.

 

Lightly beat egg yolk and 1/2 t water in small bowl.  Pour the demerara sugar into a shallow dish.  Slice chilled log in half.  One at a time brush all sides of log with egg yolk and then roll in demerara until fully coated.

 

Use a serrated knife to slice each log into 12 individual cookies (about 1/2 inch thick).  Place cookies on baking sheet about 2 inches apart.  Bake for 18-20 minutes.  Leave on baking sheet a few minutes then transfer to a rack to cool completely.

My house always has sweet treats.

 

My sale items from Swiss Colony just arrived today--yum-yum, bon bons, cake, gingerbread cookies, chocolate covered popcorn, etc.

 

I like pecan cookies but I buy, I do not bake.

 

I am sure your recipe is delicious.

I've never heard of demerara sugar, so I had to look it up (I don't do a lot of baking!). This probably isn't the right time to look for it at the grocery store, but I will when things start returning to normal. Thanks for the recipe, as I really like shortbread cookies.

@jannabelle1 I have never heard of demerara sugar either...I also had to google...learn something new everyday!!

I have turbinado (raw) sugar which would be a pretty good sub and very easy to find in any grocery store.

 

Demerara sugar is very expensive!  I know I didn't pay that for my turbinado sugar.

My shortbread recipe uses regular sugarr:

 

3/4 cup pecans

2 sticks softened butter

1/2 cup sugar

1 tsp vanilla

2 cups flour

1/2 tsp salt

 

Spread pecans in single layer on baking sheet.  Toast at 350 degrees for 5 minutes.  Chop finely by hand or in food processor.

 

Beat butter and sugar in big bowl with electric mixer until fluffy.  Beat in vanilla.  Beat in flour and salt.  Beat in pecans.  Place dough on plastic wrap and shape into flattened disk.  Wrap in plastic wrap and chill for 1/2 hour.

 

Roll dough on lightly-floured counter to 1/8" thickness.  Cut into 2" round shapes with cookie cutter and place on parchment-lined baking sheet.  Chill for 10 minutes.

 

Bake at 350 degrees until golden brown, about 12 minutes.  Cool on wire rack.
