Hi Beebee!
I have a question for you. Back when you posted the following recipe, I copied it w/ a plan to make it one of these days. The 'soft custard' texture sounded appealing.
So, the other day, I pulled it from my recipe file, & found it needs clarification. Could you please tell me how much evaporated milk is needed? I have some that needs to be used...

Stephenson’s Apple Farm Green Rice
3 c cooked rice
1 c chopped parsley
1/2 c grated cheddar cheese
1/2 c chopped onion
1/4 c chopped green pepper
1 clove garlic, minced
14-1/2-oz can evaporated milk
2 eggs, beaten
1/2 c vegetable oil
1 T salt
1/2 t each seasoned salt, pepper
1/4 t Ac’cent, monosodium glutamate
Juice and grated rind of one lemon
Mix rice, parsley, cheese, onion, green pepper, garlic in greased 2-qt casserole. Blend rest of ingredients. Mix into rice. Sprinkle with paprika. Bake at 350 deg F about 45 minutes, or until it’s like a soft custard.
