This is one of my Thanksgiving favorites, for those of you who like oyster dressing.

Oyster Dressing

1/2 c. butter

1 c. finely chopped onions

1 c. finely chopped celery

6 c. dried seasoned bread crumbs

2 eggs, beaten

salt & pepper

2 c. chopped raw oysters, with liquid

1/2 c. milk

Generously butter 2 qt. baking dish. Saute onion & celery in 1/2 c. butter until tender, about 15 min. Remove from heat & stir in bread crumbs. Add eggs, salt & pepper, oysters with liquid, & milk, tossing lightly. If dressing is not moist enough, add more milk (it should be wet but not soupy). Turn dressing into buttered baking dish. Cover & bake with turkey, adding turkey drippings frequently. Bake 50-60 minutes, taking cover off the last 10 minutes to get a crispy top.

Note: If using unseasoned bread crumbs, add 2 tsp. poultry seasoning to dressing mixture before baking.
