Overnight Coffee Cake

2 Cups All-Purpose Flour

1 Teaspoon Baking Powder

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

3/4 Cup Granulated Sugar

1 Cup packed Brown Sugar

2 Teaspoons Ground Cinnamon

3/4 Cup (1 1/2 sticks) butter, melted

1 Cup Milk

2 Large Eggs

1/2 Cup Chopped Pecans

 

 

Coat a 9x13 inch baking dish with cooking spray.

 

In a large bowl, combine 2 cups flour, baking powder, baking soda, salt, granulated sugar, 1/2 cup brown sugar, 1 teaspoon Cinnamon, butter, Milk, and eggs.  Beat until well combined, pour into prepared baking dish, then cover and chill at least 8 hours, or overnight.

 

Preheat oven to 350 degrees.

 

In a small bowl, combine remaining brown sugar and cinnamon with the pecans.  Sprinkle over chilled batter

 

Bake 35-40 minutes or until a tooth pick inserted in center comes out clean.  Cut and serve warm.

Hi @CareBears. I am curious, and mean no disrespect, but have you made this cake before and been successful?

 

I'm asking, because I've always been under the impression that once the batter is mixed, a cake must be baked immediately.

I was wondering if this recipe had been tried out, too.  I don't see the point in letting it sit so long without baking.  There is no yeast involved.  Inquiring minds want to know.:-)

@PinkyPetunia It could just be baked right away, but the recipe indicated that if you let it sit in the refrigerator over night, you could just pop it in the oven, and save yourself some prep time in the morning, and enjoy a nice warm slice in the morning, IMO it was so good served right out of the oven.  Sorry I just paste and copy the recipes off the internet.

 

I idid make it and followed the recipe exactly as shown.

@bmorechick I had left out the brown sugar in the ingredients, so make sure you re-check so you have the correct version
