Giada DeLaurentiis' pasta salad. I took this to a beach party and they ate it all up.  It was lemony and light. No need to keep cold.  I actually wanted seconds and there was none left.

This summer?  Where I live?  My phone set to 911 speed dial and my insurance card. . . couldn't get enough water to help.

No picnics here until late October. It's 111 degrees outside at 2:00 going to 115. Winter is our time to come out and have fun.

In the temps we have right now, we won't be doing anything mayonnaise based. We will be eating outside with my kids and grands next week. We are planing to grill steaks, chops and seafood. I'll bake or boil potatoes, and we should have fresh corn to cook. That's pretty much it. We keep foil on top of the food to keep the flies off. They are our worst enemy.

That is a pleasant thought....good old-fashioned picnic....and temperatures will get cooler for it someday!

So, when we have a good day, I will bring....

 

Watermelon Salad

 

1/4 cup extra virgin olive oil

2 tablespoons freshly squeezed lime or lemon juice

1/2 teaspoon salt

pepper, to taste

1 small watermelon, rind removed, cut into 1" chunks

   and chilled

1/4 cup mint leaves, chopped

4 ozs. feta cheese, crumbled

 

Combine olive oil, lemon or lime juice, salt and pepper.  Pour over chilled watermelon along with the mint.  Toss gently and sprinkle with feta cheese.

Too hot for a picnic lately but when it is cooler we do a lot of backyard cook outs.  

Sometimes a pasta salad or a macaroni salad, fresh fruits.   Just depends  on what we are having and what someone might like to have.  Sometimes a nice lettuce salad with lots of fresh veggies in it.

No it's too hot & humid plus it's supposed to rain.

There are also too many flies & mosquitoes?
