Orange Pecan French Toast Casserole
1 cup brown sugar
1/3 cup butter...melted
2 tablespoons white Karo corn syrup
cooking spray
1/3 cup pecans...chopped
1 teaspoon grated orange rind
1 cup orange juice
1/2 cup milk
3 tablespoons sugar
1 teaspoon cinnamon
1 teaspoon vanilla
3 large egg whites
2 large eggs
1 pound french bread loaf...cut into 1 inch slices
Combine brown sugar, butter and corn syrup. Pour into a 9x13 inch baking dish coated with cooking spray. Sprinkle pecans evenly over sugar mixture in baking dish. Mix together orange rind, orange juice, milk, sugar, cinnamon, vanilla, egg whites and eggs. Stir with whisk. Arrange bread slices on top of pecans in baking dish. Pour egg mixture over bread. Cover and refrigerate for an hour or overnight. Preheat oven to 350*. Carefully turn bread slices to absorb egg mixture. Let stand at room temperature for 15 minutes. Bake at 350* for 35 minutes or til browned.
