Much of inland Southern California is or has been orange country. Edward's Mansion in Redlands, CA, was a favorite place for many years to have a great luncheon, and they were known for these muffins, which are still a favorite:

Edward's Mansion Orange Muffins

2 c sifted flour
2/3 c sugar
1 T baking powder
2/3 c shortening
1/3 c soft butter
4 eggs, beaten
1/2 c milk
1/2 c orange juice
1/2 c diced orange sections
1/4 c sliced almonds

Preheat oven to 350 deg F.

Mix flour, sugar and baking powder in large mixing bowl. Add the following ingredients in order and one at a time while stirring; shortening, soft butter, beaten eggs, milk and orange juice. Do not add all at once but one by one gradually.

Put batter into greased or paper-lined muffin tins, filling each tin 2/3 full. Top each with diced orange sections and sliced almonds.

Bake in 350 deg F oven for 25 minutes or until done. Makes 16 muffins.
