Living in the Midwest and with this weather that won't stop.I am very bored.I love to bake,so I found this recipe.It is very good. I wanted something with orange in it.

Orange Coffee Cake

1/4 c softened butter

3/4 c sugar

2 eggs

1T orange juice

1T grated orange peel

1 1/2 c flour

2 t baking powder

1/4 t salt

1/2 c milk

1/4 - 1/2 t orange extract

Topping

1/2 c sugar

1/2 t ground cinnamon

2 T melted butter

Preheat over 375 degrees and spray a 8x8 baking pan

In a large bowl cream butter and sugar,add the eggs one at a time and beating well

after each addition.

Beat in orange juice and orange peel and orange extract.Combine the flour,baking powder,salt.

Add to the cream mixture alternately with the milk.

For the topping combine sugar and cinnamon and sprinkle over the batter and drizzle the butter over the top.

Bake for 30-35 minutes or until toothpick in the center come out clean.

Enjoy!

Sounds good and sounds like just the right size for two of us. I often want to try something new but wasteful making a huge bundt or sheet cake.

Sounds good except for the topping. An orange glaze would be nice. I guess that type of topping is what is generally considered for a coffee cake,

since I'm not much of a baker, we've always had the Pillsbury orange rolls on Christmas morning since our daughter was little. but I add some things to make them more special.

I unroll the dough and add raisins and chopped pecans , then sprinkle with a mixture of cinnamon, sugar and fresh grated orange zest. then roll them back up and bake. then I take the glaze that comes with them and put it in a small bowl. I mix in a little of the fresh juice from the orange I zested and add a little powdered sugar to make the right consistency, then drizzle over the rolls.
