Oh-So-Southern Pineapple Cheddar Casserole with Ritz Crackers

 
A white casserole dish of pineapple cheese casserole.
This pineapple cheese casserole is classic Southern comfort. Juicy canned pineapple and sharp cheddar meld into a dish that’s perfectly gooey, tangy, and sweet. Topped with a buttery Ritz cracker crust, it’s a side dish that always sparks conversation and has everyone going back for seconds, too!
 
 
 
PREP: 15 minutes
COOK: 25 minutes 
TOTAL: 40 minutes 
 6 Servings 
 

Ingredients

  • 2 cups Pineapple or two 8 oz cans, drained
  • 1 cup sharp cheddar cheese grated
  •  cup sugar
  • 6 tablespoons flour
  • 1 sleeve Ritz crackers crushed
  • ½ cup butter melted
 

Instructions

  • Preheat oven to 350º.
  • Drain pineapple and place in the bottom of an 8 x 8 inch glass baking dish.
  • Combine sugar, flour, and cheese and sprinkle on top of the pineapple.
  • Crush crackers and place on top. Drizzle melted butter over he crumbs.
  • Bake for 25 minutes until top is golden brown.
 
Tips + Notes
 
  • You can use fresh or canned pineapple chunks, don’t use crushed, it will be too mushy.
  • You can use sharp or mild cheddar cheese.
  • You can use cheese crackers or panko crumbs instead of Ritz Crackers.

@Calibeach.  Different and sounds delicious.  I bet it would be good with ham.  Thanks for posting.

@Kachina624  yes, it would be good with ham. I have some canned pineapple chunks and tiblets in my pantry that I want to use up and I just bought a big box of Ritz crackers at Costco. All that I need to buy is the cheddar cheese.

@Ainhisg your recipe is the same as the one I posted, but just different quantities of the ingredients. What size of a casserole dish did you use?

Right, but the quantity of ingredients affects the taste and consistency of the final product. I personally use the recipe I posted, which is from Mrshappyhomemaker .com. I use a 2 qt square baker.

@Ainhisg Thank you! I think it depends upon the vessel size and the final yield. I will have several different appetizers so I'm not sure I want a large quantity. 

 

Your recipe calls for 1 cup of sugar vs the one I posted 1/3 cup of sugar. But your recipe also calls for a larger quantity of the pineapple.

Thanks for posting this @Calibeach !!  Years ago, somebody brought this to a Chrismast Dinner carryin at work and I loved it.  I didn't bother getting the receipe because I knew nobody in my family would eat it.  I may have to make this just for myself!!
