This is a salad that I sometimes serve with Easter Dinner.

Orange Sesame Salad

1/2 lb sharp cheddar cheese, cut in thin strips
1 cup slivered green pepper (I prefer red)
1/2 cup sliced celery
3 qts torn salad greens (I use a combination of red leaf and green leaf)

1/2 tsp salt
1/2 tsp dry mustard
1/4 c sugar
1/4 c white wine vinegar
2 tsp grated onion

4 oranges cut in bite size pieces or 2 cups canned mandarin oranges
1 avocado, sliced
2-3 tsp sesame seeds toasted

Combine cheese, pepper, celery and greens in a large salad bowl.

Beat together in a small bowl, salt, mustard, sugar, vinegar and onion. Pour over salad and toss.

Add oranges and avocado. Sprinkle with sesame seed and toss again once or twice. Serve at once.

Serves 8-10
