I got this recipe in an e-mail from Cuisine at Home.  I tried it last night and it is easy and worth sharing.

 

3/4 cup orange marmalade
2 T finely diced piquante pepper (such as Peppadews)
2 T piquante pepper juice
1 T reduced salt tamari
1 T rice vinegar
2 t chili garlic sauce or sambal oelek
2 t cornstarch
1 t minced fresh garlic
1 t minced fresh ginger
1/2 t toasted sesame oil

 

2 T peanut oil
4 boneless, skinless chicken breasts seasoned with salt and pepper

 

Whisk together marmalade, pepper, pepper juice, tamari, vinegar, chili garlic sauce, cornstarch, garlic, ginger and sesame oil. 

 

Heat peanut oil in saute pan over high heat until it shimmers; add chicken and saute until golden, about 4 minutes per side. 

 

Add marmalade mixture to pan: reduce heat to medium low and simmer, covered, stirring sauce and flipping chicken occasionally until 165 degrees (10-12 minutes).  Serve chicken with sauce. 

 

I made this as written.  I think it would be good with chicken thighs instead of breasts.  I may try that next time and just adjust the cooking time. 

 

I served this with Almond Rice (that I posted a couple days ago) and some steamed fresh aspargus.  Hope you enjoy it.

What an interesting list of ingredients.  Do you keep all of these items in your pantry or fridge?  I am a Southern cook and I don't have these items in mine.  The recipe sounds delicious!  I love Asian food.

I was wondering the same thing, Zhills-- especially the "1 t minced fresh finger". Smiley Happy

I like Asian flavors so I do keep many in pantry.  The Peppadews are not Asian.  I get them in the olive bar of my local market but you can also buy them in jars. 

 

Tamari is just soy sauce-like condiment but has a fuller flavor.

Rice vinegar I use in sauces, salad dressings, etc.

Chili garlic sauce is a type of hot sauce that has many uses. 

Toasted sesame oil also has many uses and is kept in fridge. 

 

I hope this answers what I think you were asking.....
