Easy Yellow Rice
Chicken and Yellow Rice is a staple in the Tampa Bay area. Use chicken broth instead of water. Quick brown your chicken and finish cooking with the rice or cook in broth before adding rice. Also good with pork or seafood.

I got this recipe from Oxmore House and I have been dying to try it!
Shrimp with Creamy Orange-Chipotle Sauce
4 servings (serving size: 1/2 cup shrimp and 2 tablespoons sauce)
Ingredients
2/3 cup half-and-half
1 large chipotle chile, canned in adobo sauce
1 teaspoon grated orange rind
Cooking spray
1 1/2 pounds peeled and deveined large shrimp
3/4 teaspoon ground cumin
1/4 teaspoon salt
2 tablespoons chopped fresh cilantro
Hot cooked linguine (optional)

HOW TO MAKE WHIPPED FETA
INGREDIENTS:
DIRECTIONS:
Add crumbled feta to a food processor and pulse until small crumbs remain. Add in cream cheese and puree for 4-5 minutes, scraping down the sides when necessary, until feta is super creamy.
Serve as desired. Use your favorite toppings!
I make Greek bruchetta using the whipped feta topped with roasted tomatoes, olives, cucumber pieces, fresh herbs and roasted garlic oil.

Thank you for that Feta spread recipe! That definitely is right up my alley and falls into my "Why didn't I think of that" category.
Sweet Potatoes and Broccoli with Olive Oil-Fried Egg
If you don’t like eggs, try topping it with a few slices of smoked salmon.
In addition to keeping you full with a big dose of fiber, broccoli may be able to reduce your risk of obesity. A number of studies, including one from 2012, reported a type of compound found in broccoli could prevent weight gain and metabolic disorders. Ingredients:
Directions: Heat 2 teaspoons oil in a large, heavy skillet over medium heat.
Add sweet potatoes and cook, stirring occasionally, until beginning to char on the outside, about 10 minutes.
Add onion and broccoli and season with salt and pepper. Continue to cook, stirring occasionally, until onions are soft and broccoli is bright green, about 7 to 8 minutes.
Transfer vegetables to a plate and keep warm.
Reduce heat to medium-low and add remaining 1 tablespoon olive oil to pan. Add eggs and cook until whites are set. Flip and cook until top is set, but yolks remain runny. Season with salt and pepper. Serve eggs over vegetables with salsa.
