GREEK LEMON RICE

 

1/2  stick butter

'

2 cups converted long-grain white rice

 

1 (32 ounce) container chicken broth

 

1/2 lemon, juiced

 

1 tsp. salt

 

3 bay leaves

 

 

Melt butter in a pot over low heat.   Pour in rice and stir to coat in butter.  Let simmer

on low heat, stirring occasionally until toasted but not burnt, abut 10 minutes.

 

Add chicken broth, lemon juice and bay leaf to rice mixture.  Bring to a rapid boil;

continue to boil for 5 minutes.

 

Reduce heat to a simmer, cover and simmer for 20 minutes.  Remove from heat and let sit covered for 10 minutes.  Fluff with a fork and serve.

 

This is very good and is my preferred way to prepare rice.  It's simple and flavorful.

Fresh Broccoli Salad

 

2 lbs. fresh broccoli, cut into bite-size pieces

1 pkg. (12ozs.) fresh MUSHROOMS, sliced

2 small red onions, sliced thinly into rings

1 small can sliced ripe olives, drained

1 1/2 cups prepared Italian Dressing

1/3 cup shredded Parmesan cheese

 

In a large bowl combine all ingredients; toss to coat.  Cover and chill for at least 2 hours.

 

Makes...12 servings....good for potluck...reduce for smaller portion.

Oven Denver Omelette

 

8 large EGGS

1/2 cup Half and Half

1 cup shredded cheese

1 cup chopped ham

1/4 cup chopped green pepper

1/4 cup chopped onion

 

Whisk EGGS and cream; stir in remaining ingredients.  Pour into a greased 9" square baking dish.  Bake at 400 degrees for 25 minutes until golden on top.  Test center with knife to see if set.
