Lemony Chicken 

Ingredients:

 

For the Chicken

  • 8 chicken tenderloins, or 2 breasts, sliced horizontally
  • 1/2 cup all purpose flour
  • S&P
  • 2 eggs
  • 1 cup panko breadcrumbs
  • zest from 1 or 2 lemons, depending on how lemony you'd like it, **see note**
  • 1/4 cup grated Parmesan or Romano cheese
  • 1/4 cup EVOO
  • 2 T butter

For the Sauce

  • 1 T EVOO (or butter)
  • 1 T flour
  • 2 cloves garlic, minced
  • 1/4 C milk
  • 3/4 C heavy cream
  • 1/4 C rich chicken broth 
  • 2 teaspoons Dijon mustard
  • 3 T lemon juice, or more to taste
  • 1 T butter

Instructions

For the Chicken

  • Using a meat mallet, flatten the chicken pieces so that they are even in thickness.
  • Set up your dredging station: 3 pie plates or shallow bowls:
  • In one, flour seasoned w/ S&P, in 2nd dish add the eggs and whisk w/ a fork, in the 3rd, combine the breadcrumbs, lemon zest and cheese.
  • Coat each piece of chicken first in flour, then eggs, then breadcrumb mixture.
  • Heat a large pan over medium heat and add the oil and butter. Once melted and hot, add the chicken to the pan and fry on both sides until cooked through; approximately 3-5 minutes per side depending on the thickness. You may need to do this in two batches.
  • Remove chicken from the pan and drain on paper towels to absorb any excess oil. Salt very lightly, if desired. Set aside.

For the Sauce

  • Melt the oil in a medium saucepan over medium-low heat and add the garlic.
  • Saute 1 minute until fragrant, then whisk in the flour.
  • Whisk in milk, heavy cream, chicken stock and lemon juice and bring to a boil over medium-high heat until the sauce has thickened; approximately 3-5 minutes. Taste & adjust seasoning.
  • Next, stir in the butter and pour desired amount of sauce over the chicken.

**Note** You can bake the lemon zest at 200 degrees for 5 minutes to dry it out, then add it to the breadcrumb mixture.

White Chili

 

3 (15 oz) cans Great Northern Beans, drained

2 chicken breasts, cooked and shredded

3/4 cup chopped onions

1 1/2 cups chopped yellow, red or green peppers

2 jalapeño chili peppers, stemmed, seeded, chopped (opt.)

2 garlic cloves, minced

2 teaspoons ground CUMIN

1/2 teaspoon salt

1/2 teaspoon dried oregano

3 1/2 cups chicken broth

sour cream

shredded cheddar cheese

tortilla chips

 

 

Combine all ingredients in slow cooker except the sour cream, shredded cheese and tortilla chips (optional toppings when serving).  Cover and cook on Low for 8 hours or 4 hours on High.

 

NEXT INGREDIENT .... ANYTHING TOMATO

                                     (fresh, sauce, paste, ketchup, etc)

Fajitas

 

 

INGREDIENTS

DIRECTIONS

  • Slice steak into thin strips.
  • In bowl, mix together 1 tablespoons olive oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper & salt.

  • Add beef strips and stir to coat, set aside.

  • Cut onions in half lengthwise and slice into strips, cut your peppers into strips.
  • In large non stick skillet over medium high heat, heat remaining tablespoons of olive oil.
  • Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
  • Add beef to skillet, cook, stirring for 3-4 minutes or until they lose their red color.

  • Return onions and peppers to skillet; stir for about one minute.
  • Wrap tortillas in foil and place in 350° oven for 5-10 minutes or until heated through.

  • To serve, spoon a portion of the beef mixture down the centre of each tortilla, top with your desired toppings , fold bottom of tortilla up over filling, fold the sides in, overlapping.  Enjoy!

Lemon Pound Cake

  • 1 box Yellow cake mix
  • 1 box Instant lemon pudding mix, 3.4 oz. box
  • 4 Eggs, Large
  • 1 cup Oil
  • 1/2 cup Water, Warm
  • 1 cup Sour cream, Full fat
  • 1 tbsp Lemon zest
  • 1 tsp Lemon extract

 

    • In a large mixing bowl, whisk together cake mix and pudding mix. Keep aside.
    • In another mixing bowl, add eggs, oil, water, sour cream, lemon zest, lemon extract and mix until smooth.
    • Dump the dry mixture into the wet mixture and mix until just combined. 
    • Pour batter in a greased and floured loaf pan.(Dimensions: 9×5). You can also use 2 smaller loaf pans or even a 10-12 cup bundt pan.
    • Spread batter evenly with a spatula. 
    • Bake at 350 degrees for 50-55 minutes or until an inserted toothpick in the center comes out clean. Enjoy!

This recipe is great for holidays when extra Stuffing/Dressing is needed.

 

Oven-Baked Stuffing*

 

1 cup butter

1 1/2 cups onions, chopped

1 1/2 cups celery, chopped

16 cups (3 loaves) dry/STALE BREAD, cubed

1 tablespoon salt

2 teaspoons poultry seasoning

1/2 teaspoon pepper

1/2 teaspoon thyme

1/2 teaspoon sage

2 cups chicken broth

 

In a large bowl, mix together STALE BREAD cubes, salt, poultry seasoning, pepper, thyme and sage.  Set aside.  Melt butter and then add celery and onions.  Cook 10 mins. on med-lo heat.  Pour over the bread and seasonings; mix well.  Add broth to moisten (one cup at a time until moistened enough...you decide how much you need...you can always add more later if too dry).  Place in a large greased casserole dish.  Bake, uncovered, at 350 degrees for 45 minutes.

 

* If you are short on oven space, you can fix this a day ahead then refrigerate.  Next day put into a large crock pot to warm through allowing a couple of hours on low or warm.  I do this with premade mashed potatoes too using crock pot.

Stuck on cranberries...this goes well with chicken or turkey...

 

CRANBERRY Chutney

 

1 1/2 cups fresh or frozen CRANBERRIES

1 pear, peeled and chopped

1/2 cup firmly packed brown sugar

1/3 cup raisins

1/4 teaspoon ginger

1/4 teaspoon allspice

1/4 cup water

1 tablespoon vinegar

 

In a microwave-safe 1 1/2 quart bowl, combine all chutney ingredients; cover with microwave-safe waxed paper or other cover.  Microwave on high for 5-6 minutes or until CRANBERRIES pop open, stirring twice.  Let stand until thickened and cool.  Stir before serving.

 

 

NEXT INGREDIENT ......  CINNAMON

Cinnamon Snaps

½ C sugar
½ C shortening
½ C molasses
1 tsp soda
1 Tbsp warm water
2 ½ - 3 cups all purpose flour
1 Tbsp cinnamon
1 Tbsp ginger
¼ tsp salt

 

Cream sugar and shortening.  Add molasses. 

Add soda dissolved in 1 Tbsp warm water. Mix well.

Add enough flour to make a stiff dough.

Roll into balls and flatten with a glass dipped in sugar!

Bake 8-10 mins at 375 degrees. 


Wonderful with coffee!

Okay, this is super simple and I hope it qualifies as a recipe.  One of my DH's favorite things is Italian sausage with peppers, baked inside crescent rolls.

 

I cook the sausage and peppers first on the stovetop, then wrap them in the crescent rolls and bake.
