OCTOBER 2019 RECIPE GAME

Ah the changing of the color of the leaves, the cool snap in the morning air . . . hey wait a minute, it's 90 degrees!   Sigh, ok it looks like Fall has been postponed by a day or 12 but let's think Fall and share our best autumnal recipes!

 

HOW TO PLAY.......

The first player of the month starts the game by posting their choice of recipe. At the end of the text, she or he types, "the next ingredient: xxx."
(The x's represent that person's choice of any ingredient that can be included in a recipe).
Throughout the game, the next poster in line must use the ingredient that the person ahead chose. If you can, highlight the ingredient and/or put it in capital letters anywhere that it is used throughout the recipe. That does make it easier for everyone to see how the game works.

Because of time or system delays, some duplicate posts occur to the same ingredient. The next poster generally responds to the first post for the next ingredient. Good recipes and lots of fun!!

Normally, we start out with a recipe so I will post the last one shared on the last thread and we can take it from there. Thanks to @GenXmuse (again, thank you!) who gave us our next ingredient:

YUMMY CHUNKY CHOCOLATE BROWNIES

INGREDIENTS
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour (I used whole wheat baking flour)
  • 1 cup sugar (I used coconut sugar)
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 2 eggs, lightly beaten
  • 1/4 cup prune puree*
  • 5 oz dark chocolate, roughly chopped
  • 1/2 cup toasted walnuts, roughly chopped (optional)
INSTRUCTIONS
  1. Preheat oven to 350 degrees F/150 degrees C
  2. Line an 8 x 8-inch baking tray with greased parchment paper or foil, a 2-inch overhang.
  3. Combine the cocoa, flour, sugar and salt in a bowl. Whisk to blend.
  4. In another bowl, whisk the butter, eggs and prune puree together. Add the dry ingredients and stir just to combine. Do not over mix.
  5. Fold in the dark chocolate chunks and walnuts (optional).
  6. Spread into the prepared pan. Bake for 45 minutes, or until set (I checked at minute 35 because I like them more “fudgy”).
  7. Use the parchment or foil to remove the brownies to a cooling rack. Cool before cutting into sixteen 2 x 2-inch brownies.

Pumpkin Waffles


Ingredients:

Instructions:

1.Mix waffle mix, eggs, oil, water, pumpkin, spices      and sugar in a medium-sized bowl until smooth.

2.Pour batter onto waffle iron and cook until golden brown (or to desired doneness).

3. Top with butter, syrup, whipped cream, and/or pecans.

CURRY ROASTED CAULIFLOWER

INGREDIENTS

  • 1 to 2 lb. cauliflower, trimmed and cut into bite-sized flowerets
  • 1 small red onion, peeled, cut in half lengthwise, then cut into slivers (optional)
  • 2-3 T olive oil
  • 1 T minced garlic
  • ½- 1 T curry powder of your choice
  • salt to taste

DIRECTIONS

  1. Preheat the oven to 325F/170C.
  2. Trim cauliflower, cutting into bite-sized flowerets and reserving the stems for another use if desired.
  3. Peel the onion and cut into slivers.
  4. Put the vegetables into a large zipper bag (I like the bag) or bowl and drizzle with the olive oil.
  5. Then sprinkle over the minced garlic, curry powder, and salt, and toss vegetables until they’re all coated with oil and seasonings.
  6. Spread out on baking sheet.
  7. Roast vegetables for an hour, or slightly longer, turning them every 20-25 minutes.
  8. I would start checking after about 50 minutes and remove from the oven when they’ve reached your preferred level of doneness. They should be tender but not too soft. How long you roast it depends on how big the flowerets are.
  9. Serve hot

I found this recipe online. It originally included broccoli, but I like it better with just cauliflower. The cauliflower comes out so buttery and heartwarming!

Ingredients
  • 4 oz. lo mein noodles $1.13
  • 2 Tbsp butter $0.20
  • 1/4 tsp crushed red pepper $0.02
  • 1 large egg $0.25
  • 1 Tbsp brown sugar $0.02
  • 1 Tbsp soy sauce $0.02
  • 1 Tbsp sriracha rooster sauce $0.08
  • 1 handful fresh cilantro $0.22
  • 1 sliced green onion $0.06
Instructions
  • Begin to boil water for the noodles. Once the water reaches a full boil, add the noodles and cook according to the package directions (boil for 5-7 minutes).
  • While waiting for the water to boil, prepare the sauce. In a small bowl stir together the brown sugar, soy sauce, and sriracha.
  • In a large skillet melt 2 tablespoons of butter over medium-low heat. Add the red pepper to the butter as it melts. Whisk an egg in a bowl and then add to the melted butter. Stir gently and cook through. Once the egg is done cooking, turn off the heat.
  • When the noodles are tender, drain the water and then add them to the skillet with the cooked egg. Also add the prepared sauce. Turn the heat on to low to evaporate excess moisture, and stir until everything is coated well with the sauce. Sprinkle the sliced green onions and cilantro leaves (whole) on top and serve!

Not the real thing but a good runner-up!

 

Quick Key LIME Pie

 

1 prepared graham cracker pie crust

1 Jello Instant Vanilla Pudding Mix (small box)

2 Jello LIME Gelatin Mixes (small box)

Zest and Juice of 1 LIME

Cool Whip Topping

 

Prepare pudding mix and add both LIME Gelatin Packages (dry...not prepared).  Mix together along with LIME juice and zest.  Pour into the graham cracker pie crust.  Refrigerate for several hours or overnight.  Top with Cool Whip before serving.

Spread mayo on a slice of bread.  Spread peanut butter on a slice of bread.  Sprinkle peanut butter with a thin coat of regular sugar.  Add banana slices and join for the best sandwich ever!

A Diner Classic Joe’s Special (Scrambled Eggs with Spinach, Beef, and Mushrooms)

Make a diner classic for dinner tonight - Joe's Special! Scrambled eggs with spinach, beef, onions, garlic, and mushrooms. 30 minutes.

  • Prep time: 10 minutes
  • Cook time: 30 minutes
  • Yield: 4 to 6 servings
INGREDIENTS
  • 2 tablespoons unsalted butter
  • 8 ounces crimini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, chopped
  • 1 teaspoon salt, divided
  • 6-ounce bag (8 cups) baby spinach
  • 1 pound (85 to 95%) lean ground beef
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground nutmeg
  • 6 large eggs
  • 1 teaspoon Tabasco sauce, optional
  • Sliced sourdough bread or rolls, to serve
METHOD

1 Cook the mushrooms, if using: Melt the butter in a large (12-inch) skillet over medium heat. Add the mushrooms into the skillet in a single layer and leave them alone, without stirring, until they begin to brown, about five minutes.

 

2 Cook the onions: Add the onions, garlic, and 1/2 teaspoon of the salt to the mushrooms. Cook, stirring occasionally, until the onions are softened and the garlic has lost its raw bite, about five more minutes.

 

3 Wilt the spinach: Add the spinach to the skillet, stirring it into the other ingredients for a couple minutes so that it wilts and reduces in volume.

When the spinach has just barely wilted, transfer everything from the skillet to a large, shallow serving bowl. 

 

4 Cook the ground beef. Add the ground beef to the empty skillet over medium heat. Sprinkle the Worcestershire sauce, pepper, nutmeg, and remaining 1/2 teaspoon of salt over top. Cook the beef, breaking it up with your spatula into crumbles.

Continue to cook until the beef is fully cooked through with no trace of pink remaining, 8 to 10 minutes.

Transfer the cooked beef to the serving bowl with the sautéed vegetables. Pour off any fat still in the pan, leaving just a thin film to cook the eggs. (Add a teaspoon of cooking oil or butter if the pan seems dry.)

 

 

5 Scramble the eggs. Return the pan to the stove and reduce the heat to medium low. In a medium mixing bowl, whisk the eggs with tabasco, just until thoroughly combined.

Pour the eggs into the skillet, and scramble just until the curds are barely wet and beginning to break apart, stirring often, about five minutes.

 

6 Mix everything together and serve. Add the cooked beef and vegetables back to the skillet, breaking up the eggs into bite sized pieces and stirring everything together until evenly combined.

Transfer everything back to the serving bowl and serve hot, with sourdough bread alongside.

One of my favorite meals!  I love it made with sausage also.  Don't usually add mushrooms.  Not that pretty on a plate but so yummy!
