BLUEBERRY CHICKEN SALAD WITH ROSEMARY

Blueberry Chicken Salad with Rosemary is easy enough for weekday, lunches yet fancy enough for special occasions. 

 
INGREDIENTS
  • 3 cups cooked chicken cubed
  • 1/2 cup fresh blueberries
  • 1/3 cup diced celery
  • ¼ cup diced red onion
  • 1/4 cup chopped walnuts
  • 1 Tbsp. fresh rosemary leaves, chopped
  • 1/31/2 cup mayonnaise 
  • Sea salt & pepper to taste
  • 2 green onion, ends trimmed and sliced (white part and halfway up green part)
  • Fresh lemon wedges (optional)
INSTRUCTIONS
  1. Remove chicken from packages. Roughly chop into cubes.
  2. To make salad: Combine cooked chicken and remaining ingredients in a bowl. Add mayo and gently stir to combine. Start with 1/3 cup of mayo and add more to your liking.
  3. Serve tucked into butter lettuce wraps, over a bed of mixed greens, with cucumber slices or your favorite crackers. Garnish with green onions.
  4. Serve with lemon wedges if you wish.

Nachos

For the Pico de Gallo:

  • 3 cups seeded and diced plum tomatoes (about 4 medium sized tomatoes)
  • 1/3 cup chopped cilantro (about 1/2 bunch)
  • 1/2 cup diced sweet onion (about half an onion)
  • Juice from 1 regular-sized lime
  • Mix all ingredients in a medium sized bowl. Add salt to taste.
  • Cover and refrigerate while preparing the rest of the ingredients to allow the flavors to develop.

For the Chipotle Cream:

  • 1 cup sour cream plus chipotles (pureed)

For the Taco Beef:

  • 1 pound lean ground beef
  • 1 cup red kidney beans (we used canned ones)
  • 1 package taco seasoning (we used Old El Paso 35g)
  • Put the 1 pound ground beef in a skillet on medium heat until it turns brown (approximately 7-8 minutes).
  • Add the cup of kidney beans and cook for another 2 minutes.
  • Add the taco seasoning and follow the instructions on the package. Set aside.

Assembly:

  • 2 cups grated cheddar cheese
  • 2 cups grated mozzarella cheese
  • 2 cups grated monterey jack cheese
  • 1 party-size bag tortilla chips (we used a 380g one)
  • 1 cup sliced black olives
  • 1 regular sized green bell pepper, diced
  • 1 regular sized avocado, diced
  • 1 regular sized jalapeño, sliced
  • Mix all your cheese in a bowl.

Preheat your oven to 350F. Prep a baking sheet by lining it with parchment paper.

Assembly:

  1. Assemble your nachos in layers: half your tortilla chips; half your cooked beef; half your mixed cheese and half your black olives. Repeat
  2. Bake for 5 minutes or until the cheese has melted.
  3. Remove from oven and sprinkle with jalapenos, green peppers, avocados, and fresh Pico de Gallo. Top with Sour Cream (Chipotle)

@GenXmuse  Hi. I must say when I saw your Dill Pickle Soup ecipe, I went yuck! Then I though, I love anything dill especially pickles and I love soup, so what's not to love about this recipe. Can't wait to try it.

Can I add a simple appetizer recipe?

 

Black Bean Salsa

 

2 cans black beans, drained and rinsed

2 cans shoepeg corn, drained

3 cans Rotel tomatoes with diced chilies

1/2 cup cilantro, diced

1 red onion, diced

1 teaspoon cumin

1 1/2 teaspoon salt

4 tablespoons lime juice

2 tablespoon olive oil

 

Stir all ingredients together and serve with chips.

Guacamole Dunk

 

1 ripe AVOCADO, mashed

1/2 cup finely chopped cucumber

1/2 cup finely chopped onion

1 (3 oz) package* cream cheese, softened 

2 tablespoons lemon juice

1/2 teaspoon salt

1 teaspoon paprika

dash of Tabasco, optional

 

Beat ingredients together until fluffy.  Chill.  Serve with favorite chips or crackers.

 

* I have trouble finding small packages of cream cheese anymore.  Just have to buy regular size package and cut approximately 3-4  ozs....doesn't have to be exact.

I hope you like it!  I’m all about dill pickles so when I saw this soup I knew I had to make it!

Jalapeno Popper Pasta Salad

Jalapeno Popper Pasta Salad has all the flavor of a jalapeno popper. Makes a spicy, creamy picnic side.

Prep Time 15 minutes
Total Time 15 minutes
 
Servings 8
Ingredients
  • 1 (16-ounce) box elbow pasta
  • 3 ounces cream cheese, softened
  • 3/4 cup mayonnaise, divided
  • 1/2 cup sour cream
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 (4-ounce) can diced jalapenos, drained (you could use pickled jalapenos or fresh jalapenos instead)
  • 3 green onions, sliced
  • 8 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheese (I use a combo of cheddar and Pepper Jack)
Instructions
  • Cook pasta to al dente in salted water. Drain well.
  • While pasta is cooking, stir together cream cheese, 1/2 cup mayonnaise, sour cream, vinegar, pepper, and garlic powder in a large bowl until mostly smooth. (It's ok if cream cheese isn't fully blended in.)
  • Once pasta is drained, let it cool a few minutes, and then add it to mayonnaise mixture. It should still be very warm and the heat will help smooth out the cream cheese. Stir well.
  • Mix in jalapenos, green onions. bacon, and shredded cheese. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
Just before serving, mix in the remaining 1/4 cup mayonnaise

Oregano-Lemon Chicken

 

6 bone-in CHICKEN THIGHS (3 lbs.)

3 tablespoons lemon juice

2 tablespoons honey

1 tablespoon olive oil

3 garlic cloves, minced

2 teaspoons dried oregano

 

Place chicken in a greased 9 x13" baking dish.  Combine lemon juice, honey, olive oil, garlic and oregano; pour over chicken.  

 

Bake, uncovered, at 375 for 45 minutes or until meat thermometer reads 180 and chicken juices run clear.  Baste occasionally with pan juices.

Crustless Cranberry Pie

 

Ingredients

  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 1/4 teaspoon salt
  • 2 cups cranberries 
  • 1/2 cup chopped walnuts
  • 1/2 cup butter, melted
  • 2 eggs
  • ¼ tsp almond extract
  • ¾ tsp vanilla

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch pie pan.
  2. Combine the flour, sugar, and salt. Stir in the cranberries and the walnuts, and toss to coat. Stir in the butter, beaten eggs, and almond extract. If you are using frozen cranberries, the mixture will be very thick. Spread the batter into the prepared pan.
  3. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a wooden pick inserted near the center comes out clean. Serve warm with whipped cream or ice cream.
