Chicken Zoodle Soup

 

Prep Time 30 min    Total Time45 min    Servings 6

 

Ingredients

1TBS olive oil 

1large, about 2 cups, chopped onions

2medium, about 1 cup, sliced carrots

3medium, about 1 cup, sliced celery stalks

1tsp chopped fresh thyme leaves

1/2 tsp salt

1/4 tsp ground black pepper

3cloves garlic, finely chopped

2- 32 oz cartons chicken broth

2cups shredded rotisserie chicken

2medium, about 2 cups, zoodles/zucchini, julienne-peeled or spiralized, cut in 1-inch pieces

2TBS chopped fresh flat-leaf parsley

 

Directions                          

In 5-quart Dutch oven, heat oil over medium-high heat. Add onion, carrots, celery, thyme, salt and pepper; cook 5 to 7 minutes or until vegetables soften. Stir in garlic; cook 1 minute longer.

 

Stir in broth and heat to boiling over high heat. Stir in chicken and zoodles; return to boiling. Reduce heat; simmer uncovered 10 to 12 minutes or until vegetables are tender.

 

Serve in bowls topped with parsley.

@GenXmuse  Your scrambled egg reccipe is a new one on me. But I can't wait to try it. Our local ShopRite have been giving away or selling for 8 cents cartons of eggs lately. And I've been looking for more ways to use them. Thanks for posting!

@GenXmuse Thanks for the recipe. I saw it about a year or so ago and it got buried in sooo many other recipes I still haven't made.

I hope both of you enjoy it. I was reluctant to try it because it didn’t look particularly good but I had the ingredients so I gave it a shot and thit fam liked it

Easy Fish Stick Tacos

 
Tacos aren't just for Tuesday anymore with these easy to make fish stick tacos.

Ingredients
  • 1 box Gorton's Fish Sticks or other brand 
  • 2 cups of red cabbage - shredded
  • 6 flour tortillas
  • 1 avocado - diced
  • 1/2 jalapeño pepper - diced
  • Cilantro
  • 3 limes cut into quarters
  • 1/2 cup of mayonnaise
  • 2 tbsp. Sriracha
  • 1 tsp. lime juice
Instructions
  • In a small bowl, mix mayo, sriracha and lime juice. Mix well. If you want more of a kick, add more Sriracha 1 tsp. at a time until desired flavor.
  • Cook Gorton's Fish Sticks according to package directions
  • Shred 2 cups of red cabbage and set aside
  • Dice the avocado and jalapeño
  • Chop Cilantro (NOTE: If you're not a fan of Cilantro, use Parsley instead)
  • Cut limes into quarters
  • Once Gorton's Fish Sticks are done, place 3-4 on top of flour tortilla and red cabbage.
  • Top with avocado, jalapeño and cilantro
  • Drizzle with the Sriracha Mayo and serve with lime wedges.

Triscuit Snack

12 Triscuit

12 dill pickle slices

2 Kraft singles, divide each slice into 6 pieces

lemon pepper seasoning

put Triscuit on plate.  Top each with pickle slice, then cheese.  Sprinkle with lemon pepper.  Microwave a few seconds until cheese  is melted.

PUMPKIN PIE MAGIC CAKE

Ingredients
  • 1 (30 oz) can pumpkin pie mix
  • 4 large eggs
  • 1 box spice cake mix
  • 1 cup salted butter (2 sticks) melted
  • 1 container white or vanilla frosting
Instructions
  • Preheat oven to 350f degrees.
  • Lightly spray the bottom only of a 9x13" baking dish with nonstick cooking spray.
  • In a stand mixer, (or large mixing bowl) mix together pumpkin pie mix and eggs.
  • Then mix in cake mix and melted butter. Mix for a full 2 minutes.
  • Pour batter into prepared baking dish and bake for about 45-55 minutes (center of the cake shouldn't be jiggly.)
  • Allow cake to cool completely then spread the frosting on top.
  • Cut into 12 squares and serve!

Love pumpkin cake!

 

PUMPKIN CHILI

 

1 lb ground beef
2 T oil

1 reg can pumpkin
1 pkg chili seasoning mix
2 reg cans tomatoes
½ tsp salt
¼ tsp pepper

1 can white beans
1 can kidney beans

Brown meat in oil, stirring to break into small pieces.   Add pumpkin, seasoning mix, tomatoes,  s&p.
Blend well.  Simmer for 30 minutes.  Add beans, heat through.  6-8 servings

Description

These Crispy Baked Green Bean Fries take only 15 minutes to make and are served with an incredible Creamy Sriracha Sauce for dipping! They’re WAY better than regular fries and healthier too!



Ingredients
  • 1 lb. green beans
  • 2 eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
SRIRACHA SAUCE:
  • 1/2 cup plain greek yogurt
  • 1 1/2 teaspoon sriracha
  • 1 teaspoon minced shallots
  • 1/2 teaspoon smoked paprika
  • 1 garlic clove, minced
  • 1/4 teaspoon honey
  • salt & pepper to taste
 

Instructions
  1. Preheat oven to 425 degrees.
  2. Spray a baking sheet with PAM.
  3. In a small bowl add panko, garlic powder, 1/4 teaspoon smoked paprika. Stir. Set aside.
  4. In another small bowl add eggs and whisk until completely combined. Set aside.
  5. Dunk green beans in egg mixture and put into panko mixture. Press the panko mixture onto the green beans to make sure it sticks. Set coated green beans on baking sheet in single layer.
  6. Bake for 10-12 minutes, until crispy.
  7. In the mean time, to a small bowl add greek yogurt, siracha, minced shallots, smoked paprika, garlic clove, honey, salt, and pepper to taste. Mix until combined. Set aside.
  8. Serve green bean fries with creamy sriracha sauce.

 


I made this tonight and it’s delicious!

Sweet and Crunchy Coleslaw

 

Salad:

1/2 head of cabbage, shredded or 1 package (1 lb.) shredded coleslaw

1 bunch green onions, thinly sliced

1/2 cup slivered almonds (if desired, toasted)

1/4 cup sesame seeds (if desired, toasted)

5 strips bacon, cooked and crumbled

3 carrots, shredded

1 package (3 oz.) chicken-flavored Ramen noodles, broken 

into pieces (omit seasoning mix)

 

Dressing:

1/2 cup salad oil

1/4 cup APPLE CIDER VINEGAR

1 tablespoon sugar

salt and pepper

 

Prepare the dressing; mix well and set aside.  In large bowl, combine cabbage, green onions, almonds, sesame seeds, bacon and carrots.  Pour dressing over salad mixing well.

Refrigerate 2-4 hours.  Just before serving top with the Ramen noodles.
