Here's one for German Chocolate Fudge that sounds super easy!!

GERMAN CHOCOLATE FUDGE

INGREDIENTS

12oz. pkg milk chocolate chips

14 oz can sweetened condensed milk

14.5 oz tub of Coconut Pecan frosting

INSTRUCTIONS

Place the chocolate chips and sweetened condensed milk into a microwave safe bowl and cook for one minute.

Stir and continue microwaving at 30 second intervals; stirring after each time until smooth.

Pour into a buttered 8x8 square baking dish.

Refrigerate until set, at least 3 hours.

Spread with frosting and refrigerate until all set

Cut into small squares and enjoy.

Here's one I posted on another Fudge thread here...it's so easy and my fave!! I usually add walnuts in place of mixed nuts...

Microwave Fudge

1 1/2 cups sugar

2 cups mini marshmallows

1 5-oz can evaporated milk

1/4 cup margarine or butter

1 12-oz pkg semi-sweet chocolate pieces

1 tsp vanilla

1 10 to 12 oz can mixed nuts

In 2 qt glass bowl, microwave sugar, 1 cup miniature marshmallows, evaporated milk & margarine on high for 4 1/2 to 6 minutes until marshmallows are melted. *I start with the least time and add 30 seconds at a time, as needed.


Stir once during cooking, cook another 1 1/2 minutes.


Stir in choc pieces & vanilla until smooth. Fold in nuts and remaining marshmallows.


Spread in a foil lined 8x8 baking pan. Refrigerate until firm, cut into 24 pieces.

ENJOY!!

Microwave tip given in this video is to allow the (carry over) heat of the bowl to continue to melt the chocolate while gently stirring.

It's funny because I have a can of condensed milk in the pantry and was thinking of making easy fudge with it. I have a similar recipe that a friend gave me, but I was searching for something a little different and I came across a recipe from the Pioneer Woman for Easy Peppermint Fudge. Instead of using just semi-sweet chocolate chips I am going to mix in some Andes creme de menthe baking chips so they will be good and minty. Will make them in the morning, hopefully they turn out good.

Easy Peppermint Fudge:

3 cups semi-sweet chocolate chips

1 can (14oz) sweetened condensed milk

8 whole peppermint candies, crushed

Line a square 8 x 8 pan with foil and smooth the surface. (Someone clever suggested turning the pan upside down and fitting the foil over the bottom of the pan to form the shape, then turn the pan right side up and the foil will fit right in without the bother of trying to mold it in there.) Spray foil with nonstick spray.

Combine the chocolate chips and sweetened condensed milk in a double boiler over medium heat. Heat until melted, about 5-7 minutes. Stir until smooth, then immediately pour it into the foil-lined pan. Use an offset spatula to smooth the surface, then sprinkle on the crushed peppermints.

Refrigerate for 2 hours, then cut into small squares.
