My favorite leftovers come after Thanksgiving.  Reheated usually works & various casseroles are fun to try.  Of course, the turkey sandwich layered with turkey, stuffing & cranberry sauce is always a winner here.

 

Leftover pizza (rare in this house!) is good for a late snack or breakfast.  Meatloaf sandwiches are popular here too.

 

Any favorites you'd like to share?

@MOMMAVik  After making roast beef, aside from roast beef sandwiches, I slice the leftover roast into cutlets, dip them in a beaten egg, dredge them in Italian bread crumbs and fry them for a few minutes on each side in my cast iron frying pan.  Family enjoys this.  🍖

@MOMMAVik  When the kids and grandkids come home, Dad grills steaks and I cook or bake lots of potatoes. Then, the next morning, I do steak and potatoes for breakfast. I make home fries with the leftover potatoes and thin slice the leftover steaks. Then I fry them together with butter in a frying pan. The kids can never figure out which meal is better. You better believe, I always plan to have leftovers from the night before.

Any kind of pasta.  Grits, especially if something is added and the grits are flavor-infused (bacon, cheese, shrimp).

Wow! I'm getting hungry ... can't believe I left out mentioning potatoes for fried potatoes or hash browns! Yes too soups & stews!

I really love turkey, especially the turkey breast.   I'm pretty boring, so my leftover meals are pretty basic.  Sometimes just a small bowl of mashed potatoes, or some of the green bean dish I make (pancetta, mushrooms, almond slivers, herbs).   Or I'll put some turkey on top of the mashers when I heat them up, then a little more butter, s&p, and mix it all up after I nuke it.

 

But for the turkey I like two basic things - My turkey sandwich is just some nice whole grain bread with seeds, butter on both pieces, then just some of the sliced turkey breast.  That's it.   

 

The other I like is to take that same type bread, butter on the outsides, and I make a grilled turkey and cheese.  I only do that with turkey breast I make, not any of that sliced stuff you can buy in the store.   I also like grilled ham and cheese sandwich and will make that when I have some really nice ham.
