Make a big bowl of queso....I large box Velveeta and I can regular Ro-tel. Melt the velveeta in the microwave a few chunks at a time, stir til smooth and then add the ro-tel and combine. You can add diced jalapeños if you want spicier and cooked, browned, and drained ground beef or chorizo. Serve with all the toppings you can think of along with warm tortillas and tortilla chips. I always serve my queso in a small crockpot to keep it pourable. It will get too thick if it cools.
