New Way With Sweet Potatoes........

I, nor my dad care for sweet potatoes with marshmallows...........And I generally make a bourbon sweet potato casserole, but went totally different this year...........This recipe was conderful, and caramelized during cooking........And I will add that I used a Rachael Ray Bubble and Brown pan, and it cleaned up like a charm........{#emotions_dlg.w00t} I made one change, in that I made this in the zip loc bag, and let it sit, and turned it several times, before cooking, and the results were wonderful...........Cool (I used a 9x9 pan)

Spicy Sweet Potatoes Recipe

Prep: 10 min. Bake: 40 min. Yield: 8 Servings

Ingredients

3 large sweet potatoes, peeled and cut into 1-inch cubes (about 6 cups)

2 tablespoons olive oil

2 tablespoons brown sugar

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon cayenne pepper

Directions

In a large resealable plastic bag, combine sweet potatoes and oil. Add remaining ingredients; toss to coat.

Transfer to a greased 11-in. x 7-in. baking dish. Bake, uncovered, at 400° for 40-45 minutes or until potatoes are tender, stirring every 15 minutes. Yield: 8 servings.
