I like a salad made of simple greens (I use arugula) sliced fresh pears, toasted sliced almonds and a few pomegranate pearls.  If I don't have pomegranates I use raisans.

Pea Salad

@cookinfreak - I make this for a Christmas gathering we go to every year. It's always well received, and the green peas with the red pimento combination makes it very "Christmas-y" !  Smiley Happy

 

 

 

Pea Salad


1-2 cans Le Sueur peas, drained

2 small jars pimento, drained

1 small onion, chopped

1 c. celery, chopped

1 c. green pepper, chopped

paprika

salt and pepper

1 c. white vinegar

1/2 c. oil

1 c. sugar

 

 

Mix vinegar, oil, and sugar. Pour mixture over vegetables. Refrigerate for one day before serving. Double the recipe for a large crowd. (May use frozen baby peas instead).

spring field greens mix with raspberries, feta or blue or goat cheese, dried cranberries, candied pecans or walnuts, and a raspberry vinaigrette.

 

caesar is always good and easy.....romaine with lots of shredded parmesan, lots of freshly ground pepper, homemade or store bought croutons, and a cardinis caesar salad dressing.

 

mixed green salad with cherub tomatoes, baby cucumbers, shredded carrots, yellow bell peppers, radishes, shredded cheese, slivered almonds, fried wonton strips, hard boiled egg......assorted dressings.

Your salad looks yummy.  I would add some romaine.  I taught Foods and Nutrition although, Interior design was my thing.
