Need some recipes for grapefruit--please help!

My husband gets a fruit basket every year and every year the grapefruit just slowly become hard, little balls. I feel like it's such a waste and I don't want it to happen this year. So, I figured I'd turn to the experts! Anyone have any great recipes for baking or cooking with grapefruit? Thanks in advance!
