I have only ever had beets pickled which I love.  I'm curious as to how they taste cooked differently.

Fresh beets still have their flavor minus vinegar.

Beets come out very tasty in the Instant Pot. I love them. I will also roast them in tin foil with a bit of olive oil and salt on them.

I like to roast mine but I really like to juice them. When I do, I also juice an apple to sweeten the juice up.
