I meant to buy a brisket but instead, picked up a 3 lb. boneless chuck roast. I want to make a pot roast but I remember the last time I used this cut, it was tough and chewy.
Does anyone have a recipe or marinade or something I can do with this thing? I don't want to use a crock pot. I would do it on the stove top or oven but I would love for it to be tender.l
Help - please........ Thx

I'm no Rachael Ray, but just picked one up the other day and the butcher recommended this meat for a pot roast. I'm doing it in the slow cooker and he told me it would fall apart. Hope this helps!

Those can be tender if you cook them low and slow.
I like it best with a can of mushroom soup, can of beef gravy, and half an envelope of onion soup. Mix together and pour over the top of the meat. I sear the meat first.
Put it in a dutch oven, bake at 300 for a couple of hours. I usually throw in some carrots and potatoes when the roast is almost done. Makes a delicious gravy.

Go to the inner tube (I think you know what I mean) and check out Chef John's Beef Pot Roast. I love his recipes!
I think he browns the roast on thte stovetop first and adds a few seasonings, but then he puts it in the slow cooker. I've made this and believe me, it is wonderful! The meat does fall apart on its own and it makes quite a delicious meal.
We do not eat a lot of beef in our home, but every month or so, this is my go-to favorite recipe!
You can also slow cook chuck roast low and slow in your oven until it's tender enough to shred. Makes a wonderful BBQ beef, soups, on an on.

I do mine almost exactly the same way. I remember just a few years ago you could buy a chuck roast for $7-$8 dollars. Now they're about $17! So much for the cheap cuts 😳

@eddyandme Hi and thx to all for the speedy responses. This piece was $6.49 lb. and cost $20.25. It is a little over 3 lbs.
By "slow cooker" does that mean crock pot? If so, I would have to get up early and start it. I am not an early riser. LOL I could get it ready and put it in the fridge and ask my husband to get it started in the a.m. since he gets up way before I do.
I don't make this often but I wanted to make a pot roast and really wanted a brisket. I was on the way home from the eye doctor and my eyes were so dilated, I couldn't see and I picked this up by mistake. Husband was somewhere else in the store and I never thought to ask him. Oh well.....

Yeah, they are expensive. Mine was 3.1lbs and cost $17+ (freaked me out!); almost bought an "oven roast" 'cause it was on sale, but the butcher said it would not fall apart but the chuck would. Everything's ridiculously priced nowadays, IMHO!

i made two 3 pound chuck roasts for dinner last week......with mashed potatoes, onions and carrots in with the pot roast, a green salad, and biscuts.
i dust both sides of the roasts with seasonings (salt, pepper, garlic powder, onion powder) and wondra flour. i then sear both sides of the meats in a small amount of oil/butter. it then goes into a roaster and i cover them with cut up sweet onions. i pour a bit of beef broth, water, and red wine into the pan i used to sear the meat and let that bubble for a few minutes and then add it into the roast. i cover the pot. the oven is set at 350 and it needs to roast for at least 3.5 hours. about one hour before it is done i add in the carrots. this cut of beef makes a lot of natural juices which you can then take some out and mix it with some wondra flour to thicken it OR add in your favorite gravy or gravy base. it is one of our favorite meals and i always make enough for leftovers.
i have done it in a crock pot and in the ninja also.
it always comes out fork tender......never dry and chewy. excellent to use on a sandwich also!

oh and YES......chuck roast is no longer an inexpensive piece of meat anymore! $6.99 a pound last week.
